Recipes of the Month: Crunchy Balls

Serves: makes 20

Ingredients
500g Pork mince
1/2 cup grated Edam cheese or ½ cup of drained crushed pineapple
2 tablespoons sweet chilli sauce
2 tablespoons chopped fresh herbs
2 tablespoons lemon zest
Salt and freshly ground black pepper
1 cup cornflakes

Method
1.Preheat oven to 165°C.

2 In a bowl and with clean hands, mix everything together except cornflakes.

3.Shape into balls.

4. Crush the cornflakes in a plastic bag and then spread on a dinner plate.

5. Roll the balls in the cornflakes.

6. Place on baking paper on an oven tray and bake for 10-15 minutes until cooked. To serve Serve with a dipping sauce made from sweet chilli sauce thinned down with the juice from the lemon.

Hints/Tips
-
Grate in a peeled carrot to make the balls extra healthy.
- Serve with a toothpick in each ball for easy handling.
